Make a boxed cake mix taste like Bakery Cake!
I’ve learned a little trick of the dessert trade. When I’m in a pinch for time, but want to make something sweet, sometimes I succumb to those boxed cake mixes. I prefer to bake from scratch, but sometimes it is just easier to grab a box cake mix. That doesn’t mean I have to sacrifice quality. I’ve learned (thanks to www.threecookingsisters.com) that with just a few tweaks, those boxed cake mixes can be just as sinisterly delicious as bakery cake.
Take a peek at the directions on the back of the cake mix box.
Add one more egg (or 2 if you want something very rich).
Use melted butter instead of oil and double the amount.
Use whole milk instead of water.
Mix well and bake according to the back of the box directions.
That’s it. The batter will seem a little thicker, not as watery, and will bake into a gorgeous and rich cake. Just those few additions/substitutions will leave you with a Bakery style cake that won’t crumble apart or be pocked with tiny air holes. The only problem you’ll have is stopping at just one slice.
