  • 1 lb ground chicken
  • ½ cup breadcrumbs
  • ¼ cup grated parmesan cheese
  • 3 tbsp freshly chopped parsley
  • 4 cloves garlic, chopped
  • 1 large egg
  • salt
  • black pepper
  • 3 tbsp olive oil
  • 1 28-oz can crushed tomatoes
  • 1½ cup shredded mozzarella
  • your favorite pasta, cooked (for serving)
  1. Preheat oven to 400 degrees F.
  2. Make meatballs: In a large bowl, combine ground chicken, breadcrumbs, parmesan, 2 tbsp parsley, half the garlic, and egg and season with salt and pepper.
  3. Mix until fully combined, then form into meatballs.
  4. In a large oven-safe skillet, heat 1 tbsp oil over medium heat.
  5. Add meatballs and brown each side, 5 minutes.
  6. Transfer to a plate.
  7. Add remaining two tbsp oil to skillet.
  8. Add remaining half garlic and cook until fragrant, 1 min.
  9. Add crushed tomatoes and crushed red pepper flakes.
  10. Stir until combined.
  11. Bring to a low simmer, then return meatballs to skillet and nestle in sauce.
  12. Top with mozzarella and bake until cheese is melted and chicken no longer pink, 10 min more.
  13. Garnish with remaining parsley and parmesan.
  14. Serve over pasta.
