These moist, lemon bars are full of flavor and the powdered sugar give them just the right touch of sweetness!
  • 2 cups all-purpose flour
  • 1 cup butter or margarine, softened
  • ½ cup powdered sugar
  • 2 cups granulated sugar
  • 4 teaspoons grated lemon peel, if desired
  • 6 tablespoons lemon juice
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 4 eggs
  • Powdered sugar (to sprinkle on top)
  1. Heat oven to 350ºF. Mix flour, butter and powdered sugar. Press crust mixture into bottom of ungreased 9x13 pan. Bake crust 20 minutes. Meanwhile, beat granulated sugar, lemon peel, lemon juice, baking powder, salt and eggs until light and fluffy. Pour over the hot crust and return to the oven. Bake for an additional 25 to 30 minutes or until crust is slightly browned. Cool and then dust with powdered sugar. Enjoy!
