As a Mom of 4, I am very familiar with Fried Chicken.
Nuggets, tenders, various other shapes and sizes…my kids love them all. And, they have always been a familiar staple on my menu.
I always feel better making my own…at least that way I know what the ingredients are and how they were made.
When I opened the jar I could smell a faint coconut scent and the oil was a fully clear liquid (thanks to the crazy warm weather we’ve been having)!
I was concerned at first that the “coconut” flavor would affect the taste or consistency of the tenders. But, was also curious!
After allowing the oil to get sizzling hot, almost until it smokes, I placed a half dozen chicken tenders in the oil. After about 5 minutes, I turned them over to find a golden, crisp coating. They cooked evenly and thoroughly.
After they were thoroughly cooked, I placed them on a paper towel to soak up all the extra grease. This is what I always do when frying chicken. But, I can tell you there was almost NO grease.
These tenders were light, crispy, and very flavorful.

We enjoyed light, crispy tenders with much less grease than usual. I can’t wait to try a fish fry with this oil!
